The Veronese culinary tradition contains a wealth of dishes made from typical local products which are then embellished in ways fired by the imaginations of the local chefs. GNOCCHI are one of the authentic local dishes, and are made from the humble POTATO. They are celebrated each year on the Friday in Carnival week under the reign of the Papà del Gnocco who is the undisputed king of the Veronese Carnival celebrations.
Other unforgettable first course dishes are the TORTELLINI from VALEGGIO sul MINCIO, BIGOLI (pasta) with duck sauce, and RISOTTO with tastasal (a peppery sausage meat). Traditional local main courses are: PASTISSADA DE CAVAL (braised horse meat), and LESSO con la PEARA' (boiled meats with a peppery bread sauce). Almost all the meat dishes come served with the local YELLOW POLENTA (cornmeal) which is a staple ingredient in the Veronese cooking tradition.
A wide variety of freshwater fish — from trout to pike — are included in the local cuisine, caught in the abundant rivers and lakes. Outstanding typical sweet dishes include the Christmas PANDORO renowned throughout Italy, as well as the local NADALIN containing dried fruit and almonds, BACI DI GIULIETTA (Juliet s kisses — a chocolate indulgence), RUFIOI which are deep fried carnival sweets, and SBRISOLONE, an almond-flavoured shortbread which is usually eaten drenched in grappa.
VALPOLICELLA
The valley that extends to the north west of Verona contains a wealth of natural marvels such as the Veja Bridge and the Molina Waterfalls. Prehistoric and Romanesque rchaeological remains include the Fumane Grottos and the Churches of San Giorgio and San Floriano, whilst there are numerous villas including the Mosconi — Bertani villa (in Novare); the Rizzardi and the Del Bene villas. This area is known all over the world for its famous vineyards with their celebrated vines from which quality red wines such as VALPOLICELLA, RECIOTO, and AMARONE are made. Localised towns and villages are renowned for their orchards - the succulent PEACHES grown around Pescantina and the CHERRIES from Marano di Valpolicella are unforgettable, whilst pig farming is the most important livestock in this area, yielding the typical Veneto salami known as SORPRESSA.
SOAVE
The Eastern area of the Verona province unfolds before the traveller to reveal a wealth of historic interest, gastronomic specialities and unique landscapes. Discover the Medieval town of Soave; the ancient Roman thermal baths in Caldiero, and the Val di Illasi with its Romanesque churches and noble villas. The area around Soave has long been famous for its white wines - the soil is ideal for growing the Garganega variety of grapes, which are then transformed into delicious SOAVE DOC wine. Alongside the vineyards this territory is renowned for its typical production of EXTRA VIRGIN OLIVE OIL, especially in the area of the Mezzane hills and the surrounding fertile valleys. Cherries are cultivated in Cazzano di Tramigna, peas in Colognola ai Colli, and Arcole is famous not only for its ASPARAGUS production, but also for its excellent DOC wine of the same name.
PIANURA o BASSA VERONESE
The territory to the south of Verona is dominated by the vast Po valley plain, largely given over to the cultivation of cereal crops. The area around Isola della Scala is one of the best examples of this farming culture where everything is geared to the production of VIALONE NANO RICE IGP. This rice is interpreted in a variety of different ways in the Veronese cooking tradition; con tastasal (with a spicy sausage meat); con pontEl (with a pork chop), con il pessin (tiny freshwater fish), con le rane (frogs). Other important crops here are RADICCHIO ROSSO ( red chicory) in the Cologna Veneta area, CAVOLO (cabbage) from Castagnaro, FRAGOLE (strawberries) from San Giovanni Lupatoto, MELE (apples) from Zevio, MELONE (melons) from Trevenzuolo and Erbé and MANDORLATO (almond cake) for which the town of Cologna Veneta is justly renowned. The Veronese plain is not only renowned for its agriculture, but in many of the towns and villages important historical buildings still stand, from the Romanesque parish churches of Belfiore, Isola della Scala, Erdebello, Cerea and Gazzo to the Scaligeran fortifications that dominate the towns of Valeggio sul Mincio, Villafrance, Nogarole Rocca, Isola della Scala and Sanguinetto, and which made up the Serraglio (chain of forts). |
